Gluten free Green plantain tortillas

Ingredients:
Yield: 4-5 small tortillas
1 medium size green plantain
1/2 teaspoon nutritional yeast
1/2 teaspoon turmeric
pinch of salt ( remember that you can substitute the spices for any other spices or herbs that you like)
Instructions:
Peel plantains and discard the peel, cook it in boiling salted water until soft ( about 5-10 min)
Drain the water, cool the plantains down.
PLace the platians in a blender or food processor with all the spices/herbs blend and Blend until a ball forms ( do not over mix)
Form small balls ( about 4-5) if you don't have the tortilla press, you can smash each ball in between the plastic bags with a plate or a pan.
To cook, heat a large skillet over medium heat and lightly grease oil. Once hot, add one to two tortillas at a time
Store cooled leftovers covered in the refrigerator up to 3-4 days (though best when fresh), or in the freezer up to 1 month
