Leftover red lentil falafels with roasted garlic kefir mayo x @remymartinus

One of the things I enjoy the most in the kitchen is to create new dishes with recipes  that I already have in my fridge. It confirms that you can make a variety of delicious meals with simple ingredients, so I’m particularly excited to share this recipe with you :) 

One of the best ways for me to breathe new life into any leftovers is with vibrant, fresh elements and flavors like herbs and aromatics and citrus. falafel is full of those very things! it’s quick, nutritious, and tasty 

As you know traditional Falafels include either chickpeas or fava beans as the main component, both legumes, just like their cousin, the lentil! so, with apologies to falafel purists, it’s a no brainer that some sort of falafel-like situation would be the perfect way to bring lentils back from the food waste dead



For the Red Lentil falafels

1/2 cup of cookedRed lentils ( or any other type of lentils, chickpeas work as well)

6 Tablespoons of Tapioca flour or chickpea flour

1/2 teaspoon togarashi o Cayenne pepper ( if want it spicy)

2 Tablespoons of Cilantro Stems ( or any other herbs you like)

1 whole egg

1 Tablespoon of tahin ( optional)

INSTRUCTIONS

  1. Place the Cooked Lentils, FLour, Togarashi, whole egg, salt, cilantro stems ( or herbs) into the bowl mix until well combined.

  2. Heat up a medium size pan with 1 tablespoon of Olive oil, Form Squared or golf ball sized patties and place them onto the pan.

  3. sear the falafels on both sides for about 2-3minutes on each side ( until golden brown

  4. Sprinkle with flaky salt while still hot.

  5. Leftovers freeze well and can be refrigerated for up to three days.

Kefir mayo

2 Roasted garlic cloves ( Mashed)

1 tablespoon dijon mustard

2 tablespoons Kefir or Greek Yogurt

1/4 teaspoon pepper


instructions:

1-Place the mashed garlic, dijon mustard, greek yogurt and pepper into a bowl and mix until well combined. Season to taste if needed.

Curry oil

5 tablespoons of virgin olive oil

1 tablespoon of curry

1-Combine the oil + the curry powder and whisk until well combined.
