Winter squash seaweed Stew 

This stew only takes 25 minutes to make :D, it's delicious and packed with powerful nutrients ! 

Greens would also make a lovely addition to this hearty stew; simply toss a few handfuls in when the squash is almost tender, and stir until greens begin to wilt.

Winter squash seaweed Stew 

 Sweet Potato Miso Soup 

 Look for shiitake and wakame in the macrobiotic section of the natural foods store. 

Prep Time: 10 minutes 

Cooking Time: 15 minutes 

Yield: 4 generous servings 

Ingredients: 

3 dried shiitake mushrooms 

6 cups water 

1/2 small onion, sliced 

1 chopped Winter squash or sweet potato 

3 stalks of wakame 

3 tablespoons miso: white, red or barley miso 

1/2  tablespoon Salt 

1 tablespoon rice vinegar 

Garnish: 

toasted sesame seeds 

sliced scallions 

The juice of one Lemon 

Directions: 

1. Soak shiitake in 1 cup of water. 

2- Sauté onion,garlic, mushrooms, leeks for about 2-3min

3- Add remaining water to the pot with the sauteed vegetables, add the winter squash or sweet potato and wakame. 

4-When softened, remove shiitake from water. Thinly slice and add to soup. Strain the soaking liquid and 

add to the soup as well. 

5-Simmer until winter squash/sweet potatoes are tender. At this point you can mash the winter squash/sweet potato a little to make the soup creamier. 

7-Place one cup of the soup in a bowl. Dissolve the miso in this bowl with the soup. 

8-Add the dissolved miso back to the pot and stir to combine. After you add the miso to the soup, do not boil it again. Boiling miso destroys its nutritious enzymes. 

9- Serve soup hot with garnishes of sesame seeds, scallions or a squeeze of lemon juice.
